We roast the cocoa, macerate the cocoa curd for several days with 20% EDELSCHWARZ organic gin and then dry the cocoa curd. Alcohol and water evaporate completely and the cacao absorbs the flavors from the gin. Edelschwarz Bio Gin is made from 17 Alpine botanicals, including: Juniper, Edelweiss, Cranberry, Currant and various herbs.

The cacao variety "Chuncho" is one of the oldest cacao varieties which can be found only very rarely. Already the Maya used this cocoa variety. The chocolate from the original cocoa Chuncho is complex, aromatic with a delicate melting. Not far from the fascinating Inca site of Machu Picchu, Chuncho cacao grows in the Urubamba Valley, defying the passage of time. Cacao scientists believe that the ancient chunchos are among the most aromatic cacao in the world. A successful fair trade campaign allows more cacao to be bought directly from the farmers at fair prices. This fine flavoured cocoa is produced organically and fairly by 40 smallholder families in Peru.
